Goats Cheese and Roasted Garlic Bruschetta

I roasted some garlic at the weekend but didn’t use it, so thought I’d make a spot of lunch with it today.

Toast one side of a couple of pieces of bread ( I had some baguette going stale ).

Spread the garlic puree on the other side, top with the goats cheese then put back under the grill.

Top it with some salsa verde.
