Smoked Mackerel Fish Cakes

Ingredients:

  • 300g cold mashed potato
  • 200g mackerel, skinned and boned and flaked
  • 1/2 tbsp horseradish sauce
  • 1 beaten egg
  • 1 tsp chopped capers
  • couple of spring onions
  • 2 tbsp plain flour
  • 2 tbsp polenta ( or fine breadcrumbs )

Method:

  • Mix together everything other than the mackerel, then stir the mackerel into the mix, trying not to mash it up to much.
  • Shape the fish cakes, and dust both sides with polenta.
  • Fry for about 10 minutes on each side.

I served them with warm root veg salad and new potatoes with lemon and smoked garlic oil.
