Root veg and bean casserole with baked potatoes and some greens.

This one doesn’t really need a recipe or any ingredients as it just consists of a selection of root veg ( mine included beetroot, hence the vibrant red colour ), some onion and some garlic, all softened in a tablespoon of oil.

Stir in a tablespoon of plain flour, add some dried herbs and some stock, and let it cook until everything is tender.

Serve with baked potatoes and some greens.
