This was something I’d never tried before, but which were really delish. Given them a go next time you get a celeriac.
Method:
Trim all of the really grubby roots off, and scrub the rest. Rub it with some oil and some salt, wrap it in foil and cook it until it’s done ( about an hour, but keep an eye on it ). It’ll feel softish when it’s finished.
Let it cool enough that you can handle it, then slice it into 1cm slices, rub them with the juices and maybe a bit of chilli and fry them until they have browned satisfactorily. I also rubbed them with some porcini powder ( diced porcini, whizzed up to a powder )
I served them with fried mushroom, garlic mayo, some left over root veg roasted and some smokey beans.
