Ingredients:
- 300g cold mashed potato
- 200g mackerel, skinned and boned and flaked
- 1/2 tbsp horseradish sauce
- 1 beaten egg
- 1 tsp chopped capers
- couple of spring onions
- 2 tbsp plain flour
- 2 tbsp polenta ( or fine breadcrumbs )
Method:
- Mix together everything other than the mackerel, then stir the mackerel into the mix, trying not to mash it up to much.
- Shape the fish cakes, and dust both sides with polenta.
- Fry for about 10 minutes on each side.
I served them with warm root veg salad and new potatoes with lemon and smoked garlic oil.
